I really want to highlight the step for draining the grease from the sausage in this recipe. You do not want all of that grease pooled into the quiche as it may cause it to be oily and bake unevenly. Additionally, it may leak out after cooking. Draining the sausage thoroughly is the best way to have this recipe turn out as desired.
